Cauliflower with tomatoes and feta cheese |

Ingredients: (Serves 3-4) 2 tbsp olive oil 1 onion, chopped 2 cloves garlic, chopped 1 cauliflower, cut into florets 1 tin chopped tomatoes 2 tsp oregano 1 tbsp lemon juice 100g/3½ oz feta cheese, crumbled Salt, pepper Method: 1. Heat the oil in a pan and cook onion for 5 mins until soft. 2. Add garlic, cauliflower, tomatoes and oregano, cover and cook on a low heat for 10 mins until the cauliflower is tender. 3. Add feta cheese, season with salt, pepper and lemon juice and serve.
