Ingredients: (Serves 4) 750g/1 lb 11oz baby potatoes 500g/1 lb 2oz mushrooms, halved 2-3 cloves garlic, finely chopped 4 tbsp olive oil 2 tbsp lemon juice 3 stalks celery, finely sliced Bunch of scallions, finely sliced Few chilli peppers, chopped 1 tbsp curry paste Handful of fresh parsley, chopped Salt, pepper Method: 1. Cook the potatoes in a pan of salted boiling water until tender; then drain, peel and half the potatoes. 2. While the potatoes are cooking, mix together mushrooms, garlic, 2 tbsp olive oil, lemon juice, salt and pepper and leave to marinate. 3. Heat 2 tbsp olive oil in a large pan, add celery and scallions and stir fry for a minute. 4. Add mushrooms with the marinade and fry for approx 5 mins. 5. Add chilli peppers and potatoes and stir well. 6. Add curry paste and cook for another minute. 7. Season to taste and serve sprinkled with parsley.
