Ingredients: (Serves 4)  400g/14oz couscous 600ml/1 pt boiling water 4 tbsp olive oil Bunch of scallions, sliced 1 large aubergine, diced 2 cloves garlic, crushed Squeeze of lemon juice Salt Method: 1. Put the couscous into a bowl with some salt and pour in the water. Cover and leave for 5 mins. Then fluff up with fork. 2. Heat 2 tbsp olive oil in a pan, add scallions and aubergine and gently cook for 4 mins. 3. Add garlic and continue to cook for another 2 mins. 4. Stir in the cooked couscous, squeeze of lemon juice and 2 tbsp olive oil. Season to taste and serve.
