Ingredients: (Serves 4)
4 small courgettes, cut into ½cm (¼ in) slices
8-10 triangles Laughing cow cheese
6 cloves garlic, crushed
Pinch of nutmeg
150-200g/5-7oz grated cheddar
Chopped parsley to garnish
Method:
1. Preheat the oven to 210°C/fan 190°C.
2. Mash the soft cheese with garlic and nutmeg, spread mixture on one courgette slice and press another slice on top (like a sandwich). Repeat with remaining courgette slices.
3. Arrange the courgettes in a non-stick baking dish (in max 2 layers), sprinkle with grated cheddar and bake for 20 mins.
4. Transfer to serving plates, garnish with chopped parsley and serve with baby potatoes.
