Ingredients: 800g/1 lb 12oz tomatoes, cut into slices (½ inch thick) 2 red onions, thinly sliced 2 cloves garlic, thinly sliced Bunch of parsley, chopped ½ bunch of basil, chopped 75g/2½ oz grated parmesan 75g/2½ oz white breadcrumbs 10 tbsp olive oil Salt, pepper Method: 1. Preheat the oven to 200°C/fan 180°C and grease an ovenproof dish. 2. Arrange the tomato slices on the bottom of the dish (so they partially cover each other), season well with salt and pepper. 3. Sprinkle the onions and garlic over the tomatoes. 4. Mix together parsley, basil, parmesan, breadcrumbs and olive oil to make a paste and spread over the vegetables in the dish. 5. Bake in the preheated oven for approx 30 mins and serve with some crusty bread.
