Roasted veg & houmous wrap Print E-mail

Ingredients: (Serves 2)  

1 red & 1 yellow pepper, cut into chunks

1 red onion, cut into wedges

1 courgette, roughly chopped

2 tbsp olive oil

4-6 tbsp houmous

2 soft flour tortillas, warmed

2 tbsp chopped coriander + extra leaves to garnish

Finely grated rind of ½ lemon

Salt, pepper

 

Method:

1. Preheat the oven to 200°C/fan 180°C.

2. Put the peppers, onion and courgette in a roastinf tin, drizzle with olive oil and roast for 30 mins.

3. Spread the houmous over tortillas, top with roasted vegetables, coriander and lemon rind, season and roll up. Serve garnished with some extra coriander leaves.
