Cauliflower fritters Print E-mail

Ingredients: (Serves 4)  
1 large cauliflower, broken into florets
2-3 slices of white bread, finely chopped
200ml/7fl oz milk
4 eggs
2-3 tbsp plain flour
1-2 tbsp chopped parsley
Salt, pepper
Oil for frying

Method:
1. Cook the cauliflower in a large pan of salted water for 10 mins; drain and leave to cool slightly.
2. Put the bread in a large bowl, pour over the milk and leave to soak.
3. Finely chop the cooked cauliflower and add to the bowl with the rest of the ingredients, mix well.
4. Heat the oil in large frying pan, add spoonfuls of the mixture into the pan, flattening and shaping them with the back of the spoon. Fry until golden on one side, then carefully turn over and fry on the other side as well. Serve with potatoes.
