Ingredients: (Serves 3-4) 1 cauliflower, broken into florets 2 tbsp oil ½ onion 1 tbsp fresh chopped parsley ½ tin chopped tomatoes 100ml/3½ fl oz ketchup Grated cheese to serve
Method: 1. Cook the cauliflower in a pan of salted water until tender; drain. 2. Heat the oil in a large pan, add onion and cook for approx 5 mins, add cooked cauliflower and parsley and cook for another 2 mins. 3. In a cup mix together chopped tomatoes with ketchup and pour into the pan, stir well. 4. Sprinkle with grated cheese and serve with potatoes.
