Ingredients: (Serves 4)  900g/2 lb mixed vegetables (carrots, potatoes, turnips, mushrooms, corn, courgettes, aubergines etc.) 2 onions, chopped 1 clove garlic, crushed 1 tbsp oil 1 can of chopped tomatoes 4 tbsp tomato puree 2 tsp paprika Salt, pepper Method: 1. Cut the vegetables into bite-sized pieces. 2. Heat the oil and fry the onions for 5 mins. 3. Add garlic and the vegetables, tomatoes, tomato puree, paprika and seasoning. Fry for another 5 mins, then transfer to a casserole dish 4. Bake at 210°C/fan 190°C for about 40 mins until the vegetables are cooked.
